Sole Meunière
Sole Meunière is a classic French dish consisting of sole, preferably whole, that is dredged in flour, sautéed in butter, and served with the resulting brown butter sauce, parsley and lemon.
Ingredients - Serves 2
- Parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Unsalted butter - 4 tablespoons
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- All-purpose flour - 1/2 cup
- Sole fillets - 2
Let's Get Started
- Season the sole fillets with salt and pepper, then dredge in flour.
- In a large skillet, melt 2 tablespoons of the butter over medium heat until it starts to foam.
- Add the sole fillets and cook for 2-3 minutes on each side, until golden brown.
- Remove the fillets from the skillet and keep warm.
- In the same skillet, add the remaining butter and cook until it turns brown.
- Remove from heat and add the lemon juice and parsley.
- Pour the sauce over the sole fillets and serve immediately.
