  1. Preheat the oven to 350°F and grease a muffin tin.
  2. In a bowl, combine the flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together the milk, melted butter, vanilla extract, and one egg.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Pour the batter into the muffin tin, filling each cup about halfway.
  6. Crack an egg into each cup, then sprinkle with shredded cheese and chopped parsley.
  7. Bake for 20-25 minutes, or until the bread is golden and the eggs are set.
  8. Let cool for a few minutes before removing from the tin. Serve warm.
