Smoked Salmon Hashbrowns

Ingredients - Serves 4

Let's Get Started

  1. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
  2. Heat the olive oil in a large non-stick skillet over medium heat.
  3. Add the onion and garlic and cook until softened, about 5 minutes.
  4. Add the grated potatoes, spreading them out in an even layer. Cook, without stirring, until the bottom is golden and crispy, about 10 minutes.
  5. Flip the hashbrowns and cook on the other side until golden, about 10 minutes more.
  6. Add the smoked salmon and dill to the skillet and stir to combine. Cook for another 2-3 minutes, until the salmon is heated through.
  7. Season with salt and pepper to taste.
  8. Serve the hashbrowns hot, with a dollop of sour cream on top if desired.
