Smoked Salmon Hashbrowns
A delicious and hearty breakfast dish combining crispy hashbrowns with smoky salmon and fresh herbs.
Ingredients - Serves 4
- Sour cream - For serving
- Salt and pepper - To taste
- Fresh dill - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Smoked salmon - 200 grams, flaked
- Potatoes - 4 large, peeled and grated
Let's Get Started
- Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
- Heat the olive oil in a large non-stick skillet over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the grated potatoes, spreading them out in an even layer. Cook, without stirring, until the bottom is golden and crispy, about 10 minutes.
- Flip the hashbrowns and cook on the other side until golden, about 10 minutes more.
- Add the smoked salmon and dill to the skillet and stir to combine. Cook for another 2-3 minutes, until the salmon is heated through.
- Season with salt and pepper to taste.
- Serve the hashbrowns hot, with a dollop of sour cream on top if desired.
