Black Bean and Corn Quesadillas
These hearty quesadillas are filled with black beans, corn, and melted cheese. They're perfect for a quick and easy dinner.

- Sour cream - For serving
- Salsa - For serving
- Flour tortillas - 8
- Cheddar cheese - 2 cups, shredded
- Corn - 1 cup, frozen or fresh
- Black beans - 1 can, drained and rinsed
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the black beans and corn and cook until heated through, about 5 minutes.
- Place a tortilla in the skillet and sprinkle with a quarter of the cheese.
- Spoon a quarter of the bean and corn mixture over the cheese, then top with another tortilla.
- Cook until the bottom tortilla is golden and the cheese is starting to melt, about 2 minutes.
- Flip the quesadilla and cook until the other side is golden and the cheese is melted, about 2 minutes more.
- Repeat with the remaining tortillas, cheese, and bean and corn mixture.
- Cut the quesadillas into wedges and serve with salsa and sour cream.
