Black Bean and Corn Quesadillas

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the black beans and corn and cook until heated through, about 5 minutes.
  4. Place a tortilla in the skillet and sprinkle with a quarter of the cheese.
  5. Spoon a quarter of the bean and corn mixture over the cheese, then top with another tortilla.
  6. Cook until the bottom tortilla is golden and the cheese is starting to melt, about 2 minutes.
  7. Flip the quesadilla and cook until the other side is golden and the cheese is melted, about 2 minutes more.
  8. Repeat with the remaining tortillas, cheese, and bean and corn mixture.
  9. Cut the quesadillas into wedges and serve with salsa and sour cream.
