Skirt Steak with Garlic Butter Potatoes and Sautéed Spinach

Ingredients - Serves 4
- Lemon juice - 1 tablespoon
- Spinach - 1 pound
- Garlic - 4 cloves, minced
- Butter - 4 tablespoons
- Baby potatoes - 1 pound
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Skirt steak - 1.5 pounds
Let's Get Started
- Season the skirt steak with salt and pepper on both sides.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the steak and cook for 3-4 minutes on each side, or until desired doneness. Remove from the skillet and let rest.
- In the same skillet, add the baby potatoes and cook until golden and crisp. Remove from the skillet and set aside.
- In the same skillet, melt the butter and add the minced garlic. Cook until fragrant.
- Add the cooked potatoes back into the skillet and toss to coat in the garlic butter. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and the spinach. Cook until wilted. Season with salt, pepper, and lemon juice.
- Serve the skirt steak with the garlic butter potatoes and sautéed spinach on the side.
