Skirt Steak with Garlic Butter Potatoes and Sautéed Spinach

Ingredients - Serves 4

Let's Get Started

  1. Season the skirt steak with salt and pepper on both sides.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the steak and cook for 3-4 minutes on each side, or until desired doneness. Remove from the skillet and let rest.
  3. In the same skillet, add the baby potatoes and cook until golden and crisp. Remove from the skillet and set aside.
  4. In the same skillet, melt the butter and add the minced garlic. Cook until fragrant.
  5. Add the cooked potatoes back into the skillet and toss to coat in the garlic butter. Remove from the skillet and set aside.
  6. In the same skillet, add the remaining tablespoon of olive oil and the spinach. Cook until wilted. Season with salt, pepper, and lemon juice.
  7. Serve the skirt steak with the garlic butter potatoes and sautéed spinach on the side.
