Sichuan Dry Fried Green Beans
A popular Sichuan dish, these green beans are blistered and charred, then cooked with chili sauce, soy sauce, and Sichuan peppercorns.
Ingredients - Serves 4
- Scallions - 2, thinly sliced
- Chili sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Sichuan peppercorns - 1 teaspoon, crushed
- Ginger - 1 tablespoon, minced
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tablespoons
- Green beans - 1 pound, trimmed
Let's Get Started
- Heat the oil in a wok or large skillet over high heat until it begins to smoke.
- Add the green beans and stir-fry for about 10 minutes, until they begin to blister and char in spots.
- Reduce the heat to medium, then add the garlic, ginger, and Sichuan peppercorns. Stir-fry for another minute.
- Add the soy sauce and chili sauce, stirring to coat the green beans.
- Cook for another 2 minutes, until the sauce is absorbed.
- Remove from heat and stir in the scallions. Serve immediately.
