Sichuan Dry Fried Green Beans

Let's Get Started

  1. Heat the oil in a wok or large skillet over high heat until it begins to smoke.
  2. Add the green beans and stir-fry for about 10 minutes, until they begin to blister and char in spots.
  3. Reduce the heat to medium, then add the garlic, ginger, and Sichuan peppercorns. Stir-fry for another minute.
  4. Add the soy sauce and chili sauce, stirring to coat the green beans.
  5. Cook for another 2 minutes, until the sauce is absorbed.
  6. Remove from heat and stir in the scallions. Serve immediately.
