Nanjing Salted Duck
Nanjing Salted Duck is a famous traditional dish in Nanjing, China. The duck is marinated in a special brine, then steamed to perfection, resulting in a tender and flavorful dish.
Ingredients - Serves 4
- Scallions - 3, cut into large pieces
- Ginger - 1 piece, smashed
- Water - 8 cups
- Salt - 1 cup
- Cinnamon stick - 1
- Star anise - 2
- Sichuan peppercorns - 1 tablespoon
- Whole duck - 1 (about 2 kg)
Let's Get Started
- Clean the duck and pat dry. Set aside.
- In a large pot, add the Sichuan peppercorns, star anise, cinnamon stick, salt, and water. Bring to a boil.
- Add the ginger and scallions to the pot. Let the brine cool completely.
- Submerge the duck in the brine. Cover and refrigerate for at least 8 hours, or overnight.
- Remove the duck from the brine and pat dry. Let it air dry for about 2 hours.
- Steam the duck over high heat for about 1 hour, or until the duck is cooked through.
- Let the duck cool before cutting into pieces. Serve.
