Shrimp with Longjing Tea
This is a classic Chinese dish that combines the delicate flavor of Longjing tea with the sweet taste of shrimp.
Ingredients - Serves 4
- Ginger - 1 inch piece, minced
- Garlic - 2 cloves, minced
- Vegetable oil - 2 tablespoons
- White pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Cornstarch - 1 tablespoon
- Water - 1 cup
- Longjing tea leaves - 2 tablespoons
- Shrimp - 1 pound, peeled and deveined

- Steep the Longjing tea leaves in the hot water for 5 minutes, then strain and set the tea aside.
- In a bowl, combine the shrimp, cornstarch, salt, and white pepper.
- Heat the vegetable oil in a wok or large skillet over medium heat.
