Shrimp Ceviche
This refreshing shrimp ceviche is made with fresh shrimp, citrus juices, tomatoes, onions, and cilantro.
Ingredients - Serves 4
- Tortilla chips - For serving
- Salt - To taste
- Avocado - 1, diced
- Jalapeno - 1, seeded and finely chopped
- Cilantro - 1/4 cup, chopped
- Red onion - 1/2 cup, finely chopped
- Tomatoes - 2 medium, diced
- Lemon juice - 1/4 cup
- Lime juice - 1/2 cup
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- Bring a pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes, until they turn pink and opaque. Drain and let cool.
- In a large bowl, combine the lime juice and lemon juice.
- Cut the cooked shrimp into bite-sized pieces and add them to the bowl with the citrus juices. Let marinate for 10 minutes.
- Add the diced tomatoes, red onion, cilantro, jalapeno, and diced avocado to the bowl. Season with salt and gently toss to combine.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Serve the shrimp ceviche chilled with tortilla chips on the side.
