- Tortilla chips - For serving
- Salt - To taste
- Tomato - 1, diced
- Jalapeno - 1, seeded and finely chopped
- Cilantro - 1/2 cup, chopped
- Red onion - 1, finely chopped
- Orange juice - 1/2 cup
- Lemon juice - 1/2 cup
- Lime juice - 1/2 cup
- Pacific cod - 1 pound, cut into 1/2 inch pieces
Let's Get Started
- In a large bowl, combine the cod, lime juice, lemon juice, and orange juice. Make sure the fish is completely covered in the juice. Cover and refrigerate for 4 hours, or until the fish is opaque.
- Drain the fish, reserving a small amount of the citrus juice.
- Add the red onion, cilantro, jalapeno, and tomato to the fish. Stir to combine.
- Season with salt to taste. If desired, add a bit of the reserved citrus juice for extra flavor.
