Shaoxing Wine Chicken
Shaoxing Wine Chicken is a classic Chinese dish made with chicken, Shaoxing wine, and aromatic spices.
Ingredients - Serves 4
- Scallions - 2, chopped (for garnish)
- Salt - To taste
- Sugar - 1 teaspoon
- Dark soy sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1-inch piece, sliced
- Shaoxing wine - 1/2 cup
- Chicken thighs - 4, bone-in and skin-on
Let's Get Started
- In a large bowl, combine the chicken thighs, Shaoxing wine, ginger, garlic, soy sauce, dark soy sauce, sugar, and salt. Mix well to coat the chicken evenly. Let marinate for at least 30 minutes.
- Heat a wok or large skillet over medium-high heat. Add the marinated chicken thighs, skin side down, and cook for 5 minutes, or until the skin is golden and crispy.
- Flip the chicken thighs and cook for another 5 minutes.
- Reduce the heat to low, cover the wok or skillet, and simmer for 15-20 minutes, or until the chicken is cooked through and tender.
- Remove the chicken from the wok or skillet and transfer to a serving plate.
- Garnish with chopped scallions and serve hot with steamed rice or noodles.
