Carpaccio de Saint Jacques
This is a simple and elegant appetizer featuring thinly sliced scallops, also known as Saint-Jacques in French. The scallops are marinated in a tangy citrus dressing and served raw.
Ingredients - Serves 4
- Chives - 1 tablespoon, finely chopped
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lime - 1, juiced
- Lemon - 1, juiced
- Scallops - 12 large, very fresh
Let's Get Started
- Rinse the scallops under cold water and pat dry with paper towels.
- Using a very sharp knife, slice the scallops as thinly as possible and arrange the slices on a serving platter.
- In a small bowl, whisk together the lemon juice, lime juice, olive oil, salt, and pepper.
- Drizzle the dressing over the scallops, making sure each slice is coated.
- Cover the platter with plastic wrap and refrigerate for at least 1 hour to allow the scallops to marinate.
- Just before serving, sprinkle the scallops with the chopped chives.
