Seafood Congee
A comforting and hearty Chinese rice porridge cooked with fresh seafood.
Ingredients - Serves 4
- Cilantro - A handful, chopped
- Green onions - 2, chopped
- White pepper - To taste
- Salt - To taste
- Ginger - 1 tablespoon, minced
- Fish fillet - 200 grams, cut into bite-sized pieces
- Scallops - 200 grams
- Shrimp - 200 grams, peeled and deveined
- Water - 8 cups
- Jasmine rice - 1 cup
Let's Get Started
- Rinse the jasmine rice under cold water until the water runs clear.
- In a large pot, combine the rinsed rice and water. Bring to a boil over high heat.
- Reduce the heat to low, cover the pot, and let it simmer for about 1 hour, or until the rice breaks down and the mixture becomes creamy.
- Add the shrimp, scallops, fish, and ginger to the pot. Stir well and let it cook for another 10 minutes, or until the seafood is cooked through.
- Season the congee with salt and white pepper.
- Serve the seafood congee hot, garnished with chopped green onions and cilantro.
