Let's Get Started

  1. Place the chicken in a large pot and fill with enough water to cover the chicken. Bring to a boil and then reduce to a simmer, cooking for about 45 minutes until the chicken is cooked through.
  2. Remove the chicken from the pot and let it cool. Once cool, shred the chicken into pieces.
  3. In the same pot with the chicken broth, add the jasmine rice, garlic, and ginger. Cook the rice according to the package instructions.
  4. While the rice is cooking, prepare the soy bean sauce by heating it in a small saucepan over medium heat.
  5. To serve, place a portion of rice on a plate, top with shredded chicken, and drizzle with the soy bean sauce. Garnish with chopped cilantro and cucumber slices.
