Khao Man Gai

Ingredients - Serves 4
- Cucumber - 1, sliced
- Cilantro - 1/2 cup, chopped
- Soy bean sauce - 1/2 cup
- Ginger - 1 piece, about 2 inches
- Garlic - 5 cloves, minced
- Jasmine rice - 2 cups
- Whole chicken - 1
Let's Get Started
- Place the chicken in a large pot and fill with enough water to cover the chicken. Bring to a boil and then reduce to a simmer, cooking for about 45 minutes until the chicken is cooked through.
- Remove the chicken from the pot and let it cool. Once cool, shred the chicken into pieces.
- In the same pot with the chicken broth, add the jasmine rice, garlic, and ginger. Cook the rice according to the package instructions.
- While the rice is cooking, prepare the soy bean sauce by heating it in a small saucepan over medium heat.
- To serve, place a portion of rice on a plate, top with shredded chicken, and drizzle with the soy bean sauce. Garnish with chopped cilantro and cucumber slices.
