Let's Get Started

  1. In a bowl, mix the tapioca starch with water until it forms a smooth batter.
  2. In another bowl, beat the eggs and add the fish sauce, soy sauce, and white pepper.
  3. Heat the oil in a pan over medium heat. Add the garlic and cook until fragrant.
  4. Pour in the tapioca batter and let it cook until it starts to set.
  5. Add the oysters to the pan and pour the egg mixture over them.
  6. Cover the pan and let it cook for a few minutes until the eggs are set and the oysters are cooked.
  7. Uncover the pan and add the bean sprouts and green onions. Cook for another minute.
  8. Slide the omelette onto a plate, garnish with cilantro, and serve with chili sauce.
