- Chili sauce - For serving
- Cilantro - For garnish
- Green onions - 1/4 cup, chopped
- Bean sprouts - 1 cup
- Vegetable oil - 2 tablespoons
- White pepper - 1/2 teaspoon
- Soy sauce - 1 tablespoon
- Fish sauce - 1 tablespoon
- Garlic - 2 cloves, minced
- Water - 1/4 cup
- Tapioca starch - 1/4 cup
- Eggs - 4
- Oysters - 1 cup, shucked
Let's Get Started
- In a bowl, mix the tapioca starch with water until it forms a smooth batter.
- In another bowl, beat the eggs and add the fish sauce, soy sauce, and white pepper.
- Heat the oil in a pan over medium heat. Add the garlic and cook until fragrant.
- Pour in the tapioca batter and let it cook until it starts to set.
- Add the oysters to the pan and pour the egg mixture over them.
- Cover the pan and let it cook for a few minutes until the eggs are set and the oysters are cooked.
- Uncover the pan and add the bean sprouts and green onions. Cook for another minute.
- Slide the omelette onto a plate, garnish with cilantro, and serve with chili sauce.
