Seafood Bisque

Ingredients - Serves 4
- Fresh parsley - For garnish
- Salt and pepper - To taste
- Heavy cream - 1 cup
- Mixed seafood - 1 pound
- Dry white wine - 1 cup
- Fish stock - 4 cups
- Flour - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Butter - 2 tablespoons
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onion and garlic and cook until soft, about 5 minutes.
- Stir in the flour and cook for another 2 minutes.
- Slowly whisk in the fish stock and wine, then bring to a simmer.
- Add the seafood and cook until it's done, about 5-10 minutes depending on what you're using.
- Use an immersion blender to puree the soup until smooth, or transfer to a regular blender in batches.
- Stir in the heavy cream and season with salt and pepper.
