Seafood Bisque

Ingredients - Serves 4

Let's Get Started

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion and garlic and cook until soft, about 5 minutes.
  3. Stir in the flour and cook for another 2 minutes.
  4. Slowly whisk in the fish stock and wine, then bring to a simmer.
  5. Add the seafood and cook until it's done, about 5-10 minutes depending on what you're using.
  6. Use an immersion blender to puree the soup until smooth, or transfer to a regular blender in batches.
  7. Stir in the heavy cream and season with salt and pepper.
  8. Serve hot, garnished with fresh parsley.
