Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Dijon mustard - 1 tablespoon
- Heavy cream - 1/2 cup
- Chicken broth - 1 cup
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Mushrooms - 8 ounces, sliced
- Butter - 2 tablespoons
- Flour - 1/4 cup
- Salt and pepper - To taste
- Pork tenderloin - 1 pound
Let's Get Started
- Preheat the oven to 400°F.
- Season the pork tenderloin with salt and pepper.
- Dredge the pork in flour, shaking off any excess.
- Heat the butter in a large oven-safe skillet over medium-high heat.
- Add the pork and cook until browned on all sides, about 5 minutes.
- Remove the pork from the skillet and set aside.
- Add the mushrooms, onion, and garlic to the skillet and cook until the mushrooms are browned and the onion is translucent, about 5 minutes.
- Add the chicken broth, heavy cream, and Dijon mustard to the skillet and stir to combine.
- Return the pork to the skillet and spoon some of the sauce over the top.
- Bake in the preheated oven for 20-25 minutes, or until the pork is cooked through.
- Garnish with chopped parsley before serving.
