  2. Season the pork roast with salt, black pepper, caraway seeds, garlic powder, onion powder, and paprika.
  3. Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium-high heat.
  4. Add the pork roast to the pot and sear on all sides until browned.
  5. Remove the pork roast from the pot and set aside.
  6. In the same pot, add the sauerkraut, sliced apple, brown sugar, apple cider vinegar, and beef broth.
  7. Stir to combine and bring to a simmer.
