  1. Heat oil in a large pot over medium heat. Add the beef and brown on all sides. Remove from the pot and set aside.
  2. In the same pot, add the onions, garlic, carrots, paprika, and caraway seeds. Cook until the onions are soft and golden.
  3. Add the tomato paste and stir well to combine.
  4. Return the beef to the pot. Add the beef broth, red wine, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 1 hour.
  5. Add the potatoes to the pot and continue to simmer for another hour, or until the beef and potatoes are tender.
  6. Adjust the seasoning if necessary, then serve the gulasch hot with a side of bread.
