  1. In a large bowl, combine the chopped scallops, minced garlic, ginger, soy sauce, sesame oil, and green onions.
  2. Place a spoonful of the scallop mixture in the center of each wonton wrapper.
  3. Dip your finger in water and run it along the edges of the wrapper to moisten.
  4. Fold the wrapper over the filling to create a half-moon shape, pressing the edges together to seal.
  5. Repeat with the remaining wrappers and filling.
  6. Steam the dumplings in a bamboo steamer for about 10 minutes, or until the scallops are cooked through.
  7. Serve the dumplings hot with soy sauce for dipping.
