  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the pork sausage, onion, garlic, nutmeg, salt, and pepper.
  3. Roll out the puff pastry and cut it into 8 equal squares.
  4. Divide the sausage mixture into 8 parts and shape each part into a cylinder. Place each cylinder on a square of puff pastry.
  5. Fold the pastry over the sausage, pressing the edges together to seal. Repeat with the remaining pastry and sausage.
  6. Place the rolls on the prepared baking sheet and brush them with the beaten egg.
  7. Bake for 25 minutes, or until the pastry is golden and the sausage is cooked through.
