Albondigas en Chipotle
Albondigas en Chipotle is a traditional Mexican dish made with meatballs in a spicy chipotle sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Chicken broth - 4 cups
- Tomato sauce - 1 cup
- Chipotle peppers in adobo sauce - 2, chopped
- Onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Egg - 1
- Rice - 1/2 cup, uncooked
- Ground beef - 1 pound
Let's Get Started
- In a large bowl, combine the ground beef, rice, egg, half of the garlic, and half of the onion. Season with salt and pepper.
- Form the mixture into small meatballs and set aside.
- In a large pot, heat some oil over medium heat. Add the remaining garlic and onion and cook until soft.
- Add the chipotle peppers and tomato sauce to the pot and cook for a few minutes.
- Add the chicken broth to the pot and bring to a boil.
- Once boiling, add the meatballs to the pot. Reduce the heat and simmer for about 30 minutes, or until the meatballs are cooked through.
- Serve the Albondigas en Chipotle with some warm tortillas or rice.
