Ingredients - Serves 4

Let's Get Started

  1. In a large bowl, combine the ground beef, rice, egg, half of the garlic, and half of the onion. Season with salt and pepper.
  2. Form the mixture into small meatballs and set aside.
  3. In a large pot, heat some oil over medium heat. Add the remaining garlic and onion and cook until soft.
  4. Add the chipotle peppers and tomato sauce to the pot and cook for a few minutes.
  5. Add the chicken broth to the pot and bring to a boil.
  6. Once boiling, add the meatballs to the pot. Reduce the heat and simmer for about 30 minutes, or until the meatballs are cooked through.
  7. Serve the Albondigas en Chipotle with some warm tortillas or rice.
