Sankhya Lapov
Sankhya Lapov is a traditional Indian dish made with lentils, vegetables, and aromatic spices.
Ingredients - Serves 4
- Fresh coriander leaves - 2 tablespoons, chopped
- Oil - 2 tablespoons
- Salt - To taste
- Garam masala - 1/2 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garlic - 3 cloves, minced
- Ginger - 1-inch piece, grated
- Green chilies - 2, slit
- Tomato - 1, finely chopped
- Onion - 1, finely chopped
- Water - 3 cups
- Toor dal (split pigeon peas) - 1 cup
Let's Get Started
- Rinse the toor dal under running water until the water runs clear.
- In a pressure cooker, add the rinsed toor dal, water, chopped onion, tomato, green chilies, grated ginger, minced garlic, turmeric powder, red chili powder, coriander powder, cumin powder, and salt.
- Close the pressure cooker and cook on medium heat for 4-5 whistles, or until the dal is cooked and soft.
- Once the pressure is released, open the cooker and give the dal a good stir.
- Heat oil in a pan over medium heat.
- Add the cooked dal to the pan and simmer for 5-10 minutes, stirring occasionally.
- Garnish with fresh coriander leaves and serve hot with rice or roti.
