  1. Soak urad dal and rice for 4-5 hours. Drain the water and grind to a smooth paste.
  2. Heat oil in a pan for deep frying. Make small balls of the batter and deep fry until golden brown. These are the vadas.
  3. Soak tamarind in water and extract its juice.
  4. Cook toor dal in a pressure cooker until soft.
  5. Heat oil in a pan, add mustard seeds, curry leaves, asafoetida, turmeric powder, and red chili powder.
  6. Add tamarind extract, cooked dal, and salt. Let it boil for 10-15 minutes. This is the sambhar.
  7. Soak the fried vadas in the sambhar for 10-15 minutes before serving.
