Sambal Kangkong
Sambal Kangkong is a popular spicy stir-fried water spinach dish commonly found in Southeast Asian cuisine.
Ingredients - Serves 4
- Salt - To taste
- Vegetable oil - 2 tablespoons
- Sugar - 1 teaspoon
- Soy sauce - 1 tablespoon
- Onion - 1 small, sliced
- Red chili peppers - 3, sliced
- Garlic - 3 cloves, minced
- Shrimp paste (belacan) - 1 tablespoon
- Water spinach (kangkong) - 500 grams
Let's Get Started
- Wash the water spinach thoroughly and cut into 2-inch pieces.
- In a small bowl, mix the shrimp paste, minced garlic, sliced red chili peppers, soy sauce, and sugar to make the sambal sauce.
- Heat vegetable oil in a wok or large pan over medium heat.
- Add the sliced onion and stir-fry until translucent.
- Add the sambal sauce to the pan and stir-fry for 1-2 minutes until fragrant.
- Add the water spinach to the pan and stir-fry for 3-4 minutes until wilted and cooked through.
- Season with salt to taste.
- Serve hot as a side dish with steamed rice.
