  1. Place a sage leaf on each veal cutlet, then cover with a slice of prosciutto. Secure with a toothpick.
  2. Dust each cutlet lightly with flour.
  3. Heat the butter in a large skillet over medium heat.
  4. Add the veal cutlets, prosciutto-side down, and cook for 2 minutes.
  5. Flip the cutlets and cook for another 2 minutes.
  6. Remove the cutlets from the skillet and set aside.
  7. Add the white wine to the skillet and scrape up any browned bits from the bottom.
  8. Return the cutlets to the skillet, prosciutto-side down, and cook for another 2 minutes.
  9. Flip the cutlets and cook for another 2 minutes, or until the veal is cooked through and the wine has reduced to a sauce.
  10. Season with salt and pepper to taste, and serve hot.
