Saltfiskur
Saltfiskur is a traditional Icelandic dish made with dried and salted fish.
Ingredients - Serves 4
- Parsley - 2 tablespoons, chopped
- Black pepper - To taste
- Milk - 1 cup
- Butter - 2 tablespoons
- Onion - 1 large, finely chopped
- Potatoes - 4 medium, peeled and diced
- Salted cod - 1 pound
Let's Get Started
- Soak the salted cod in cold water overnight to remove excess salt. Change the water a few times.
- In a large pot, bring water to a boil. Add the soaked cod and cook for 20 minutes, or until the fish is tender.
- Remove the fish from the pot and let it cool slightly. Flake the fish into small pieces, removing any bones or skin.
- In a separate pot, boil the diced potatoes until tender. Drain and set aside.
- In a frying pan, melt the butter over medium heat. Add the chopped onion and cook until translucent.
- Add the flaked fish and cooked potatoes to the frying pan. Stir gently to combine.
- Pour in the milk and cook for a few minutes, until heated through.
- Season with black pepper and sprinkle with chopped parsley.
- Serve hot and enjoy!
