Bacalhau À Minhota

- Parsley - A handful, chopped
- Olive oil - 4 tablespoons
- Garlic - 2 cloves, minced
- Onions - 2 large, sliced
- Potatoes - 4 large, sliced
- Salted cod - 500 grams, soaked and drained

- Soak the salted cod in cold water for 24 hours, changing the water several times.
- Heat the olive oil in a large frying pan over medium heat.
- Add the potatoes and onions and fry until golden brown.
- Add the garlic and fry for another minute.
- Add the soaked cod to the pan and fry on both sides until cooked through.
- Season with salt and pepper to taste.
- Sprinkle with chopped parsley before serving.
