  1. Slice the potatoes thinly using a mandoline or sharp knife.
  2. In a large bowl, combine the vinegar and salt. Add the potato slices and let them soak for at least 2 hours.
  3. Heat the vegetable oil in a large pot or deep fryer to 375°F.
  4. Drain the potato slices and pat them dry. Fry them in batches until they are golden and crispy, about 3-5 minutes.
  5. Drain the chips on paper towels and let them cool before serving.
