Crocchè Di Patate
Crocchè di Patate, also known as Potato Croquettes, are a delicious Italian appetizer made from mashed potatoes and cheese, coated in breadcrumbs and deep-fried to golden perfection.
Ingredients - Serves 4
- Vegetable oil - For frying
- Mozzarella cheese - 100g, cut into small cubes
- Parsley - A handful, chopped
- Pepper - To taste
- Salt - To taste
- Breadcrumbs - 200g
- Eggs - 2
- Parmesan cheese - 100g, grated
- Potatoes - 1 kg
Let's Get Started
- Boil the potatoes until they are soft. Drain and mash them in a large bowl.
- Add the Parmesan cheese, eggs, salt, pepper, and parsley to the mashed potatoes. Mix well.
- Take a small amount of the potato mixture and flatten it in your hand. Place a cube of mozzarella in the center and shape the potato mixture around it to form a croquette.
- Roll the croquette in the breadcrumbs, making sure it is fully coated.
- Repeat with the remaining potato mixture and mozzarella cubes.
- Heat the vegetable oil in a deep fryer or large pot to 180°C (350°F).
- Fry the croquettes in batches until they are golden brown, about 2-3 minutes.
- Drain on paper towels and serve hot.
