Ingredients - Serves 4

Let's Get Started

  1. Boil the potatoes until they are soft. Drain and mash them in a large bowl.
  2. Add the Parmesan cheese, eggs, salt, pepper, and parsley to the mashed potatoes. Mix well.
  3. Take a small amount of the potato mixture and flatten it in your hand. Place a cube of mozzarella in the center and shape the potato mixture around it to form a croquette.
  4. Roll the croquette in the breadcrumbs, making sure it is fully coated.
  5. Repeat with the remaining potato mixture and mozzarella cubes.
  6. Heat the vegetable oil in a deep fryer or large pot to 180°C (350°F).
  7. Fry the croquettes in batches until they are golden brown, about 2-3 minutes.
  8. Drain on paper towels and serve hot.
