Let's Get Started

  1. Wash and peel the potatoes.
  2. Cut one end of each potato to make a flat surface, then push a skewer through the center.
  3. Using a sharp knife, make a spiral cut all the way down the potato.
  4. Gently fan out the potato down the skewer, until you have an even gap between the slices.
  5. Heat the vegetable oil in a deep fryer or large pot to 350°F.
  6. Fry the potatoes until golden brown, about 5 minutes.
  7. Drain on paper towels and sprinkle with salt, paprika, and grated Parmesan while still hot.
