Salsiccia Di Bra

Ingredients - Serves 4
- Mustard - For serving
- Bread - 4 slices
- Olive oil - For grilling
- Sausage casings - 10 feet
- White wine - 1/4 cup
- Nutmeg - 1/4 teaspoon
- Pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Pork belly - 1/2 pound, ground
- Veal shoulder - 1 pound, ground
Let's Get Started
- In a large bowl, combine the ground veal, ground pork, salt, pepper, nutmeg, and white wine. Mix until well combined.
- Rinse the sausage casings under cold water and keep them in a bowl of water.
- Using a sausage stuffer, stuff the meat mixture into the casings. Twist the sausages into 6-inch links.
- Preheat a grill to medium heat and lightly oil the grates.
- Grill the sausages for about 7 minutes on each side, or until they're cooked through and browned.
- Serve the sausages on slices of bread with a side of mustard.
