  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, bring water to a boil. Add the pork knuckles, salt, pepper, caraway seeds, garlic powder, chopped onion, and bay leaves.
  3. Reduce the heat to low and simmer for 2 hours, or until the pork is tender.
  4. Remove the pork knuckles from the pot and place them on a baking sheet. Bake in the preheated oven for 30 minutes, or until the skin is crispy.
  5. While the pork is baking, heat the sauerkraut in a separate pot over medium heat.
  6. Serve the eisbein hot with sauerkraut and mustard on the side.
