Salmonberry Jam
A sweet and tangy jam made from fresh salmonberries. Perfect for spreading on toast or adding to yogurt.
Ingredients - Serves 10
- Pectin - 1 packet
- Lemon juice - 1 tablespoon
- Sugar - 2 cups
- Salmonberries - 4 cups
Let's Get Started
- Wash the salmonberries and remove any stems or leaves.
- In a large pot, combine the salmonberries, sugar, and lemon juice. Bring to a boil over medium heat, stirring frequently.
- Once the mixture is boiling, add the pectin and continue to boil for 1 minute, stirring constantly.
- Remove the pot from the heat and skim off any foam.
- Ladle the jam into sterilized jars, leaving 1/4 inch of headspace. Wipe the rims clean and seal with lids and bands.
- Process the jars in a boiling water bath for 10 minutes. Remove from the water and let cool completely.
- Check the seals to ensure they are tight. Store the jam in a cool, dark place for up to 1 year.
