Sai Oua
Sai Oua is a grilled pork sausage from Northern Thailand. It's a delicious blend of pork, herbs, and spices.
Ingredients - Serves 4
- Sausage casings - 10 feet
- Fish sauce - 2 tablespoons
- Red curry paste - 2 tablespoons
- Shallots - 4, finely chopped
- Garlic - 6 cloves, minced
- Kaffir lime leaves - 6, finely chopped
- Galangal - 1 piece, finely chopped
- Lemongrass - 2 stalks, finely chopped
- Ground pork - 1 kg
Let's Get Started
- Combine the ground pork, lemongrass, galangal, kaffir lime leaves, garlic, shallots, red curry paste, and fish sauce in a large bowl. Mix well.
- Rinse the sausage casings in warm water and keep them in a bowl of warm water.
- Use a sausage stuffer to stuff the pork mixture into the casings. Twist the sausages into links.
- Preheat a grill to medium heat.
- Grill the sausages for about 15 minutes, turning occasionally, until they are browned and cooked through.
- Let the sausages rest for a few minutes before serving.
