Let's Get Started

  1. Combine the ground pork, lemongrass, galangal, kaffir lime leaves, garlic, shallots, red curry paste, and fish sauce in a large bowl. Mix well.
  2. Rinse the sausage casings in warm water and keep them in a bowl of warm water.
  3. Use a sausage stuffer to stuff the pork mixture into the casings. Twist the sausages into links.
  4. Preheat a grill to medium heat.
  5. Grill the sausages for about 15 minutes, turning occasionally, until they are browned and cooked through.
  6. Let the sausages rest for a few minutes before serving.
