Choo Chee
Choo Chee is a Thai dry curry dish that is cooked with coconut milk and your choice of protein. The dish is rich, creamy, and full of flavor.
Ingredients - Serves 4
- Protein of choice (chicken, beef, tofu, etc.) - 1 pound
- Thai basil leaves - 1/2 cup
- Kaffir lime leaves - 4, torn into pieces
- Palm sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Red curry paste - 2 tablespoons
- Coconut milk - 2 cups
Let's Get Started
- Heat a pan over medium heat and add half of the coconut milk. Cook until it starts to separate and become oily.
- Add the red curry paste and stir until well combined.
- Add the protein of choice and cook until it is fully cooked.
- Add the remaining coconut milk, fish sauce, palm sugar, and torn kaffir lime leaves. Stir well and let it simmer for about 10 minutes.
- Turn off the heat and add the Thai basil leaves. Stir until the leaves are wilted.
- Serve the Choo Chee with steamed jasmine rice.
