Let's Get Started

  1. Heat a pan over medium heat and add half of the coconut milk. Cook until it starts to separate and become oily.
  2. Add the red curry paste and stir until well combined.
  3. Add the protein of choice and cook until it is fully cooked.
  4. Add the remaining coconut milk, fish sauce, palm sugar, and torn kaffir lime leaves. Stir well and let it simmer for about 10 minutes.
  5. Turn off the heat and add the Thai basil leaves. Stir until the leaves are wilted.
  6. Serve the Choo Chee with steamed jasmine rice.
