Banh Uot
Banh Uot is a traditional Vietnamese dish made with steamed rice rolls filled with savory ingredients and served with a flavorful dipping sauce.
Ingredients - Serves 4
- Chili pepper - 1, thinly sliced
- Garlic - 2 cloves, minced
- Lime juice - 1 tablespoon
- Sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Fresh herbs (cilantro, mint, thai basil) - 1/4 cup, chopped
- Lettuce - 4 leaves
- Bean sprouts - 1 cup
- Wood ear mushrooms - 1/4 cup, soaked and thinly sliced
- Shrimp - 1/2 pound, peeled and deveined
- Ground pork - 1/2 pound
- Cooking oil - 1 tablespoon
- Water - 2 cups
- Tapioca flour - 1/4 cup
- Rice flour - 1 cup
Let's Get Started
- In a mixing bowl, combine the rice flour, tapioca flour, and water. Whisk until smooth.
- Heat a non-stick pan over medium heat and brush with cooking oil.
- Pour a thin layer of the rice flour mixture onto the pan and swirl to cover the entire surface. Cook for 1-2 minutes until the rice sheet is set.
- Transfer the cooked rice sheet onto a plate and repeat the process until all the batter is used.
- In the same pan, heat some oil and sauté the minced garlic until fragrant.
- Add the ground pork and cook until browned. Add the shrimp and wood ear mushrooms, and cook until the shrimp turns pink.
- Season the filling with fish sauce, sugar, and lime juice. Stir well to combine.
- To assemble the banh uot, place a rice sheet on a clean surface. Add a lettuce leaf, a spoonful of the filling mixture, bean sprouts, and fresh herbs.
- Roll the rice sheet tightly, tucking in the sides as you go. Repeat with the remaining ingredients.
- Serve the banh uot with a side of dipping sauce made by combining fish sauce, sugar, lime juice, and sliced chili pepper.
- Enjoy the banh uot while it's still warm!
