Sabudana Kheer
Sabudana Kheer is a delicious Indian dessert made with tapioca pearls, milk, sugar, and flavored with cardamom and saffron.
Ingredients - Serves 4
- Almonds - 10, sliced
- Raisins - 10
- Cashews - 10, chopped
- Saffron strands - a pinch
- Cardamom powder - 1/2 teaspoon
- Sugar - 1/2 cup
- Milk - 4 cups
- Sabudana (tapioca pearls) - 1/2 cup
Let's Get Started
- Wash the sabudana (tapioca pearls) thoroughly and soak them in water for 2 hours.
- Drain the soaked sabudana and keep aside.
- In a large saucepan, heat the milk over medium heat until it comes to a boil.
- Add the drained sabudana to the boiling milk and stir well.
- Reduce the heat to low and let the sabudana cook in the milk for about 20 minutes, stirring occasionally.
- Add sugar, cardamom powder, saffron strands, cashews, raisins, and almonds to the kheer.
- Cook for another 5-10 minutes until the sabudana is soft and the kheer thickens.
- Remove from heat and let it cool for a few minutes.
- Serve the sabudana kheer warm or chilled, garnished with additional nuts and saffron strands if desired.
