Let's Get Started

  1. Drain the soaked almonds and peel off the skins. Blend the almonds with a little bit of milk until a smooth paste forms.
  2. In a large pot, bring the milk to a boil. Add the sugar and stir until it's fully dissolved.
  3. Add the almond paste to the pot and stir well. Reduce the heat to low and let it simmer for 5 minutes.
  4. Stir in the ground cardamom and saffron, then remove the pot from the heat.
  5. Let the Aab-e Baadaam cool to room temperature, then refrigerate it until it's chilled.
  6. Serve the Aab-e Baadaam cold, garnished with a few slivered almonds and a sprinkle of ground cardamom on top.
