Aab E Baadaam
Aab-e Baadaam is a traditional Indian almond milk beverage, often enjoyed during the summer months for its cooling properties. It's sweet, nutty, and incredibly refreshing.
Ingredients - Serves 4
- Saffron - A pinch
- Cardamom - 1/2 teaspoon, ground
- Sugar - 1/2 cup
- Milk - 4 cups
- Almonds - 1 cup, soaked overnight
Let's Get Started
- Drain the soaked almonds and peel off the skins. Blend the almonds with a little bit of milk until a smooth paste forms.
- In a large pot, bring the milk to a boil. Add the sugar and stir until it's fully dissolved.
- Add the almond paste to the pot and stir well. Reduce the heat to low and let it simmer for 5 minutes.
- Stir in the ground cardamom and saffron, then remove the pot from the heat.
- Let the Aab-e Baadaam cool to room temperature, then refrigerate it until it's chilled.
- Serve the Aab-e Baadaam cold, garnished with a few slivered almonds and a sprinkle of ground cardamom on top.
