  1. In a large pot, melt the butter over medium heat.
  2. Add the beef cubes and cook until browned on all sides.
  3. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  4. Add the diced potatoes, carrots, turnips, beef broth, bay leaves, thyme, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the beef and vegetables are tender.
  6. Remove the bay leaves and discard.
  7. Serve hot, garnished with fresh parsley.
