Russian Cabbage Soup
This hearty Russian cabbage soup, also known as Shchi, is made with cabbage, potatoes, carrots, onions, and beef broth.
Ingredients - Serves 6
- Salt and pepper - To taste
- Dill - 2 tablespoons, chopped
- Bay leaf - 1
- Beef broth - 6 cups
- Cabbage - 1 small head, shredded
- Potatoes - 2 medium, peeled and cubed
- Carrots - 2 medium, diced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and carrots, and cook until the onion is translucent, about 5 minutes.
- Add the potatoes, cabbage, beef broth, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the vegetables are tender.
- Remove the bay leaf and stir in the chopped dill.
- Serve hot and enjoy!
