Ingredients - Serves 4

Let's Get Started

  1. In a large pot, add the mackerel and enough water to cover. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  2. Drain the mackerel and set aside.
  3. In the same pot, add the coconut milk, onion, garlic, Scotch bonnet pepper, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  4. Add the mackerel, tomato, and bell pepper to the pot. Cover and simmer for 10 minutes, or until the mackerel is cooked through and the vegetables are tender.
  5. Serve the Run Down hot with rice or bread.
