Run Down
Run Down is a traditional Jamaican dish made with mackerel, coconut milk, and a variety of vegetables and spices.
Ingredients - Serves 4
- Green bell pepper - 1, chopped
- Tomato - 1, chopped
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Scotch bonnet pepper - 1, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Coconut milk - 2 cups
- Mackerel - 2, cleaned and cut into pieces
Let's Get Started
- In a large pot, add the mackerel and enough water to cover. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Drain the mackerel and set aside.
- In the same pot, add the coconut milk, onion, garlic, Scotch bonnet pepper, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Add the mackerel, tomato, and bell pepper to the pot. Cover and simmer for 10 minutes, or until the mackerel is cooked through and the vegetables are tender.
- Serve the Run Down hot with rice or bread.
