Ingredients - Serves 6

Let's Get Started

  1. In a large pot, add the flank steak and enough water to cover it. Bring to a boil, then reduce the heat and simmer for 2 hours, or until the meat is tender and easily shreds.
  2. Remove the flank steak from the pot and let it cool slightly. Shred the meat using two forks.
  3. In a separate large pot, heat some oil over medium heat. Add the sliced onions, bell peppers, and minced garlic. Cook until the vegetables are softened.
  4. Add the shredded beef, tomato sauce, crushed tomatoes, beef broth, cumin, dried oregano, salt, and pepper to the pot. Stir well to combine.
  5. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for 1 hour, stirring occasionally.
  6. Add the sliced olives and chopped cilantro to the pot. Stir to incorporate.
  7. Serve the Ropa Vieja over cooked white rice.
