Ropa Vieja
Ropa Vieja is a traditional Cuban dish made with shredded beef, peppers, onions, and tomatoes.
Ingredients - Serves 6
- Cooked white rice - For serving
- Cilantro - 1/4 cup, chopped
- Olives - 1/2 cup, sliced
- Salt and pepper - To taste
- Dried oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Beef broth - 1 cup
- Crushed tomatoes - 1 can (14 ounces)
- Tomato sauce - 1 can (8 ounces)
- Garlic - 4 cloves, minced
- Red bell pepper - 1, thinly sliced
- Green bell pepper - 1, thinly sliced
- Onion - 1 large, thinly sliced
- Flank steak - 2 pounds
Let's Get Started
- In a large pot, add the flank steak and enough water to cover it. Bring to a boil, then reduce the heat and simmer for 2 hours, or until the meat is tender and easily shreds.
- Remove the flank steak from the pot and let it cool slightly. Shred the meat using two forks.
- In a separate large pot, heat some oil over medium heat. Add the sliced onions, bell peppers, and minced garlic. Cook until the vegetables are softened.
- Add the shredded beef, tomato sauce, crushed tomatoes, beef broth, cumin, dried oregano, salt, and pepper to the pot. Stir well to combine.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for 1 hour, stirring occasionally.
- Add the sliced olives and chopped cilantro to the pot. Stir to incorporate.
- Serve the Ropa Vieja over cooked white rice.
