Tomatican
Tomatican is a traditional Chilean dish made with tomatoes, onions, and beef.
Ingredients - Serves 6
- Fresh cilantro - 1/4 cup, chopped
- Cooked white rice - 3 cups
- Water - 1 cup
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Green bell pepper - 1, diced
- Red bell pepper - 1, diced
- Tomatoes - 4 large, diced
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Beef stew meat - 1.5 pounds, cubed
Let's Get Started
- In a large pot, heat the olive oil over medium heat.
- Add the beef stew meat and cook until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
- Add the diced tomatoes, red bell pepper, green bell pepper, cumin, paprika, oregano, salt, and pepper. Stir to combine.
- Return the browned beef stew meat to the pot and add water. Bring to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, or until the beef is tender.
- Serve the tomatican over cooked white rice and garnish with fresh cilantro.
