Lomo Saltado
Lomo Saltado is a traditional Peruvian dish made with marinated beef, onions, tomatoes, and french fries.
Ingredients - Serves 4
- Cooked white rice - 4 cups
- Fresh cilantro - 1/4 cup, chopped
- French fries - 2 cups, cooked
- Yellow chili pepper - 1, seeded and sliced
- Tomatoes - 2 medium, sliced
- Red onion - 1 large, thinly sliced
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Garlic - 3 cloves, minced
- Red wine vinegar - 2 tablespoons
- Soy sauce - 3 tablespoons
- Beef sirloin - 1 pound, thinly sliced
Let's Get Started
- In a bowl, combine the soy sauce, red wine vinegar, minced garlic, cumin, salt, and pepper. Add the sliced beef and marinate for 15 minutes.
- Heat the vegetable oil in a large skillet or wok over high heat.
- Add the marinated beef and cook for 2-3 minutes, until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add the sliced red onion, tomatoes, and yellow chili pepper. Cook for 2-3 minutes, until the vegetables are slightly softened.
- Return the cooked beef to the skillet and toss with the vegetables.
- Add the cooked french fries and toss everything together.
- Remove from heat and garnish with fresh cilantro.
- Serve the lomo saltado over cooked white rice.
