Rogan Josh
Rogan Josh is a robust spicy lamb curry which is an integral part of Kashmiri cuisine and a staple of Indian restaurant menus.
Ingredients - Serves 4
- Oil - 2 tablespoons
- Salt - To taste
- Cumin powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Kashmiri red chili powder - 1 tablespoon
- Tomatoes - 2, pureed
- Ginger - 1 inch piece, grated
- Garlic - 4 cloves, minced
- Onions - 2, finely chopped
- Yogurt - 1 cup
- Lamb - 500 grams
Let's Get Started
- Marinate the lamb in yogurt for at least 2 hours, or overnight if possible.
- Heat oil in a pan and add the chopped onions. Cook until they turn golden brown.
- Add the minced garlic and grated ginger to the pan and sauté for a few minutes.
- Add the pureed tomatoes, red chili powder, garam masala, coriander powder, cumin powder, and salt to the pan. Cook until the oil separates from the masala.
- Add the marinated lamb to the pan and cook on high heat for 5-7 minutes.
- Cover the pan, reduce the heat to low, and let it simmer for about 1.5 hours or until the lamb is tender.
- Serve the Rogan Josh hot with naan or rice.
