Patacones Con Guacamole
Patacones, also known as tostones, are twice-fried plantain slices, and are typically served with a delicious guacamole dip. This dish is a popular snack in many Latin American countries.
Ingredients - Serves 4
- Jalapeno - 1, finely chopped
- Garlic - 1 clove, minced
- Cilantro - A handful, chopped
- Tomato - 1, finely chopped
- Onion - 1/2, finely chopped
- Lime - 1, juiced
- Avocados - 2
- Salt - To taste
- Oil - For frying
- Green plantains - 2
Let's Get Started
- Peel the plantains and cut them into 1-inch thick slices.
- Heat the oil in a large frying pan over medium-high heat. Add the plantain slices and fry them until they are golden on both sides. Remove them from the pan and drain them on paper towels.
- Using a tostonera or the bottom of a glass, flatten the plantain slices to about 1/4-inch thick.
- Return the flattened plantains to the hot oil and fry them again until they are crispy and golden brown. Drain them on paper towels and sprinkle them with salt.
- To make the guacamole, mash the avocados in a bowl. Add the lime juice, onion, tomato, cilantro, garlic, and jalapeno. Mix well and season with salt.
- Serve the patacones warm with the guacamole on the side for dipping.
