Patacones Con Guacamole

Ingredients - Serves 4

Let's Get Started

  1. Peel the plantains and cut them into 1-inch thick slices.
  2. Heat the oil in a large frying pan over medium-high heat. Add the plantain slices and fry them until they are golden on both sides. Remove them from the pan and drain them on paper towels.
  3. Using a tostonera or the bottom of a glass, flatten the plantain slices to about 1/4-inch thick.
  4. Return the flattened plantains to the hot oil and fry them again until they are crispy and golden brown. Drain them on paper towels and sprinkle them with salt.
  5. To make the guacamole, mash the avocados in a bowl. Add the lime juice, onion, tomato, cilantro, garlic, and jalapeno. Mix well and season with salt.
  6. Serve the patacones warm with the guacamole on the side for dipping.
