Roasted Garlic Mashed Potatoes
Creamy, flavorful mashed potatoes with the sweet, mellow flavor of roasted garlic.
Ingredients - Serves 6
- Chives - 2 tablespoons, chopped
- Salt and pepper - To taste
- Heavy cream - 1/2 cup
- Butter - 1/4 cup
- Russet potatoes - 2 pounds
- Olive oil - 2 tablespoons
- Garlic - 2 heads
Let's Get Started
- Preheat the oven to 400°F.
- Cut off the top of each head of garlic, drizzle with olive oil, and wrap in foil. Roast for 45 minutes, or until soft and golden.
- While the garlic is roasting, peel and cut the potatoes into chunks. Place in a large pot and cover with water. Bring to a boil, then reduce heat and simmer until tender, about 20 minutes.
- Drain the potatoes and return to the pot. Add the butter and heavy cream.
- Squeeze the roasted garlic out of the skins and add to the pot. Mash until smooth and creamy. Season with salt and pepper.
- Serve the mashed potatoes hot, garnished with chopped chives.
