Roasted Garlic Mashed Potatoes

Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 400°F.
  2. Cut off the top of each head of garlic, drizzle with olive oil, and wrap in foil. Roast for 45 minutes, or until soft and golden.
  3. While the garlic is roasting, peel and cut the potatoes into chunks. Place in a large pot and cover with water. Bring to a boil, then reduce heat and simmer until tender, about 20 minutes.
  4. Drain the potatoes and return to the pot. Add the butter and heavy cream.
  5. Squeeze the roasted garlic out of the skins and add to the pot. Mash until smooth and creamy. Season with salt and pepper.
  6. Serve the mashed potatoes hot, garnished with chopped chives.
