Ingredients - Serves 4
- Lemon juice - 1 tablespoon
- Feta cheese - 1/2 cup, crumbled
- Spinach - 2 cups, chopped
- Water - 2 cups
- Quinoa - 1 cup
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Butternut squash - 1 medium, peeled and cubed

- Preheat the oven to 400°F.
- Toss the butternut squash with the olive oil, salt, and pepper. Spread out on a baking sheet.
