Psarosoupa
Psarosoupa is a traditional Greek fish soup, made with fresh fish, vegetables, and a lemon-olive oil sauce known as ladolemono.
Ingredients - Serves 4
- Salt and pepper - To taste
- Lemon juice - Juice of 2 lemons
- Water - 1.5 liters
- Fish fillets - 500 grams
- Potatoes - 2, cubed
- Carrots - 2, sliced
- Garlic - 2 cloves, minced
- Onions - 2, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions and garlic and cook until the onions are soft, about 5 minutes.
- Add the carrots and potatoes and cook for another 5 minutes.
- Add the fish fillets and water to the pot. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Remove the fish from the pot and set aside. Continue to simmer the soup for another 10 minutes.
- In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the ladolemono.
- Pour the ladolemono into the soup and stir well.
- Serve the soup hot, with the fish fillets on top.
